Getting Started
1️⃣ Marinate the lamb with 2 tablespoons of the spice rub.
2️⃣ Heat a pan and sauté the onion and garlic until translucent. Then add the meat and brown it.
3️⃣ Once the meat is well browned, add the lamb stock. Let it simmer for 2.5 hours until the meat falls apart.
4️⃣ If the liquid reduces too much, you can add some broth to taste.
Couscous
1️⃣ Bring the broth to a boil and add the couscous. Cover and let it cook slowly until tender.
2️⃣ Cut the bell pepper and zucchini into small cubes and stir-fry them.
3️⃣ Mix the yogurt with 2 cloves of garlic and a spoonful of olive oil.
4️⃣ Toast the hazelnuts and then finely chop them.
5️⃣ Mix the couscous with the chopped hazelnuts and vegetables.
6️⃣ Serve the couscous with the yogurt dressing.
